Paul Hardy from Midshire Signature Services emerged victorious in the North West School Chef of the Year (SCOTY) regional final after a cook-off at MKN’s kitchen in Cannock.

Sponsored by Bisto from Premier Foods, LACA’s School Chef of the Year competition attracts some of the very best school chef talent from across the country. Regional final winners will each receive a £100 cash prize.

Paul’s winning main course was a seasoned chicken drumstick, red pepper and Spanish onion paella, sweet ‘patatas bravas’ and garlic aioli. For dessert he made layered biscuit, raspberry brownie and chocolate sponge, chocolate mousse, raspberry coulis and custard.

Premier Foods Foodservice, producers of Bisto the main sponsor of SCOTY, said: "Congratulations to Paul for delivering some outstanding school food in the regional finals – it was a tough judging process but he thoroughly deserves his spot in the national finals.

“You can really start to feel the excitement and buzz now as we enter the latter stages of the competition. We look forward to seeing Paul at the national finals, where he will have another fantastic opportunity to showcase his culinary skills and put his school food on the map.”
