Premier Foodservice to send out LACA SCOTY recipe book
The SCOTY recipe books can be used by school chefs who are preparing their menus for their return to work.
Holly Charnock, employed by Sefton Catering Services and chef in charge at Woodlands Primary School, won the 2020 SCOTY final.
Each chef had a maximum of £1.30 to spend and 90 minutes to prepare an imaginative, ‘school compliant’ two-course meal. The dishes needed to include at least one McDougalls’ product each and be suitable for serving en masse in school to 11-year-olds.
Charnock created braised beef tortellini with spinach, a tomato and basil sauce, balsamic reduction and a parmesan crisp for her main course. For dessert Charnock made a chocolate & beetroot brownie served with banana crumble ice cream and a raspberry and vanilla coulis.
Mark Rigby, SCOTY chair of judges, said: “This year, once again we have seen some amazing dishes, showcasing school caterers’ great skills, cooking techniques and influences from all around the world.
“We have been amazed at the passion and commitment from all of the contestants. Everyone put in incredible amounts of work to be part of the journey, which makes me very proud of all of the entrants and that Premier Foods was part of bringing these talented chefs together."
The recipe book also contains the main course and dessert menus from the remaining SCOTY 2020 finalists.
